Tammi’s Top of the Lake is celebrating it’s second very successful year! This special edition column includes some of my personal favorite businesses from this year. Every year Okeechobee gets all kinds of new and different businesses and I get the great honor of visiting each of them and writing about them. All businesses are unique to this town in their own way! I wish I could put them all in my column every week! These business just seem to stick out in my mind and in the community.
• Tin Fish Restaurant, 301 N. Parrott Ave., is passionate about serving lean, healthy fresh fish and other meals. The salmon, mahi mahi, grouper, snapper, and shrimp selections on the “Lightly Breaded” menu include fish-and-chip platters, seafood combos, sandwiches, tacos and burritos. • Beetle Bugs Craft Store, 107 N.E. Fourth St., is truly a treasure to the community’s crafters and artists.
No more driving an hour or more to find what you need for that school assignment or the handmade picture frame. It’s all right here. They carry scrapbooking supplies, wood craft, painting, chalkboard, kids crafts and so much more. If you cannot find it here, Amy has no problem ordering whatever you need. They will also host crafting classes. Book your next birthday party, baby shower, or any special occasion you celebrate with a crafting session. Because of Halloween, this week’s recipe is a sweet treat for everyone!
Halloween Popcorn Pumpkins
Ingredients: 5 cups popped popcorn, 1 cup candy corn, 1 cup chopped salted peanuts, 1/2 cup butter or margarine, 3 cups miniature marshmallows, 4 drops red food coloring, 3 drops yellow food coloring, 4 sticks red or black licorice, cut into thirds.
Directions:
1. Grease a muffin pan and set aside. Place popcorn, candy corn and peanuts into a large bowl and set aside.
2. Melt the butter in a large saucepan over medium heat. Stir in marshmallows, red food coloring and yellow food coloring, adjusting color if needed to get a nice shade of orange. When the marshmallows are completely melted, pour over the popcorn and stir to evenly distribute the candy, nuts and marshmallow.
3. Use a greased spoon to fill the muffin cups. Insert a piece of licorice to act as the stem, and mold the popcorn around it. Let stand until firm, 10 to 15 minutes, and then pull the pumpkins out by their stems and admire your pumpkin patch!
